We had such a fun morning making these delicious fluffy pancakes on Insta Live.
They are super easy to make and can be piled high with different yummy fillings. These are filled with blueberries and bananas but you can use Nutella, strawberries, raspberries or for a savoury version leave out the sugar and serve with ham, cheese, crispy bacon, mushrooms or grilled tomatoes. Great for breakfast and a family fav!!
Makes about 8-10
What you need:
200g self-raising flour
1 tsp baking powder
2 tbsp caster sugar (optional)
1 medium egg
300ml milk – whole, semi skimmed or oat milk
1 tbsp butter, melted
sunflower oil and a little butter for frying
To serve:
150g pack blueberries
2-4 bananas, sliced
maple or golden syrup or honey
Equipment: measuring jug, mixing bowl, small bowl to crack egg into, whisk or fork, frying pan, slice for turning, plate for serving.
What to do:
Put the flour and baking powder into a mixing bowl and stir well to combine. Make a well in the centre.
Measure the milk into a measuring jug. Break the egg into a small bowl and beat well, add to the milk with the melted butter and mix to combine.
Gradually pour the milk and egg mix into the flour and beat well with a whisk or wooden spoon until you have a smooth and lump free batter. Pour back into the jug.
Heat a little butter and vegetable oil in a non-stick frying pan. Pour enough batter so that it spreads to about 8cm across. I made 2-3 at a time. You can also use a spoon or ladle for this.
Cook for 2-3 until little bubbles appear on the surface and the underneath is golden. Flip over and cook the other side for a further 2-3 minutes.
Pile them up with blueberries, sliced banana and a good drizzle of maple or golden syrup.
Steph's Top Tips:
You can also use wholemeal self raising flour to bump up the fibre and throw in a handful of oats, you may need a splash more milk.
